I whipped up these bad boys for a Deadpool rewatch- because the only thing better than watching my favorite anti-hero is watching it while nomming on his favorite snack!
Also, seriously, my dad and I are obsessed with the Merc with a Mouth! I got us early tickets to see Deadpool in theaters and then we bought it on DVD the second it was available and have rewatched it SO much since. OMG these dessert chimichangas were an absolutely perfect complement!
Since I favor sweet treats over more savory thangs, I went with these dessert strawberry cheesecake Chimichangas from Just a Taste. I did tweak them further as well, to use what I had in my kitchen (it would take too long to run to the store and I really wanted to watch my movie, ya'know?)
Ingredients:
1/4 cup of sour cream (I substituted coconut greek yogurt)
1 tablespoon sugar (in the filling)
1 teaspoon vanilla extract
1 3/4 cups of sliced strawberries
1/2 teaspoon lemon juice
6 tortillas (I used mini ones, go for the big ones!)

create a cinnamon-sugar mixture in which to roll the chimichangas, post-fry!
When it comes down to it, this recipe is pretty simple! I mixed all of the filling ingredients - basically everything but the strawberries (which we'll get to in a sec), the tortillas, the oil, and the cinn-sug.
I chopped up my strawberries, added them to the filling and...
...mixed some more! Chimichangas, Assembler! (wait, wrong franchise.)
Next, it's a plop-and-roll. Throw some of the filling in the center of the tortilla and roll it up snug like a burrito in order to keep the insides inside while the dessert fries! Using a toothpick ensures that they won't pop open.
Let's fry, guy! Heat your oil before plopping the chimichangas in and flip when the bottom starts to look all golden-brown.
Keep a better eye on the desserts than I did. Pausing the movie is recommended!
Roll/slather/encrust these bad boys in your cinnamon-sugar mix and get ready!
BOOM! Deliciousness!
