choco zucchini bread

You know who hasn't been on the blog all that recently? 

My beloved Kittredge! 

We haven't hung out since our sleepover- stupid work schedules- and all I can say is a really miss my since-we-were-widdle best friend! 

BUT! Fear not, lovely readers! I was going through my pictures and discovered a baking day with Kitty that was previously un-posted! Since I know you guys have been missing her just as much as I have (well, maybe a little less...), I thought you could bask in her presence as you bake this. Strangely, there weren't any goofy pics. I guess we're trying something new today!

Anyway, you get to enjoy her lovely recipe now while I get to enjoy her lovely company tomorrow when we dose ourselves liberally in culture (you'll see what I mean)! 

Without further ado, enjoy the deliciousness!

Chocolate Zucchini Bread/Cake

3 cups of flour
2 cups of grated zucchini
1 3/4 cups of sugar
1 cup of vegetable oil
1/2 of a cup of unsweetened cocoa powder
1/2 of a cup of chocolate chips
3 eggs
1 tablespoon of vanilla
1 1/4 teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/4 teaspoon of baking powder

1. Preheat oven to 350 degrees F

2.Grease whichever pans you plan on using. We made itty bitty loaves!


3. Take your zucchini. Wash it, peel it, and set to grating it!




4. Mix the eggs, sugar and oil together until well blended.


5. Stir in the zucchini and the vanilla.


6. In a separate bowl, combine the flour, cocoa, baking soda, cinnamon, and baking powder.




7. Marry the two in a delicious union!



8. Mix, mix, mix!


9. Don't forget to add in your chocolate chips! You can also add walnuts, if that floats your boat.


10. Spoon the slightly lumpy mixture into your pans and bake for an hour (or until a tooth pick comes up clean).

The original recipe says to wait 20 minutes for the loaves to cool before consumption... but we didn't have that kind of willpower! These babies are too good right from the oven! See if you can resist the wafting scent of chocolate and the enticing promise of warm, perfectly gooey chips embedded in a moist, cake-like surrounding.

King of the castle was underfoot, demanding some chocozucchini!
