sleepover pancakes

As you might know, I had my first sleepover in ages on Friday with two of my favorite people. Staying up super late and having friends stay the night is just as fun as I remember!

And, as you all must know, every great sleepover deserves a great breakfast!

The meal of choice growing up was always golden pancakes smothered in maple syrup, with optional chocolate chips or fruit thrown in. mmmmm....

I recently found this recipe on pinterest and decided that pancakes were making a reappearance for this sleepover if it was the last thing I did.

Cream Cheese Pancakes
1/4 of a cup of cream cheese
2 eggs 
1 packet of sweetener
as much cinnamon as you want!


note: This recipe makes enough for about 1-2 people. We ended up doubling it to make 2 pancakes each and a leftover one for me to enjoy for lunch (they even taste good cold!)
Also, these pancakes are low carb and gluten free! Feel a little less guilty about indulging your childhood appetite?

1. Assemble all of your ingredients and measure out the proper amounts before putting them all in one bowl.


2. Mis said ingredients with the coolest implement you can fin until uniformly smooth.



3. Butter or spray your pan excessively and pour some batter into the center.



4. The blog where I found this recipe recommends cooking for 2 minutes before flipping and 1 minute afterwards. You can also just wing it the way we did (and maybe end up with a few mangled pancakes... they still taste delicious!)


4. When golden brown on both sides, take off of heat and gobble it up! They're very good on their own, but we also tried them with jams, Nutella, and syrup. 



 5. Don't forget to let your friends in on the flapjack fun!
